Chop cleaned carrots to small pieces. Heat 1 table spoon oil in a pan. Add rai, jeera, chana dal and urad dal. Let the rai and jeera splutter, add red chillies, chopped garlic and curry leaves. Stir, add chopped onions and green chillies. Fry onions until they turn into pink in color. Add chopped carrot pieces, salt and haldi, stir....close the lid and cook for 8 to 10 mins. in a low flame until the curry is done.
Take the curry into a serving bowl. Garnish with grated coconut and fresh dhaniya leaves. Colorful carrot curry is ready....
